Spaghetti Casserole

Thanks to Christine for being the first to give us a new recipe! I am actually trying this tonight to take to a friend whose hubby left this morning! So, I'll let you know how delicious it is!!

Make regular spaghetti but make extra sauce and noodles. When you are done eating spaghetti for dinner put extra noodles and sauce in a bowl and mix it together. Then add equal parts of cottage cheese and sour cream. For a 9 x 13 pan I usually add about a 1 cup of each, sometimes a little bit more. Mix well and then place in casserole dish and sprinkle with cheese on top. Now you can either put in the fridge for a few days and eat it later or put it in the freezer and take it out and leave in the fridge to thaw when ready to eat. It's easy and delicious. Sometimes my kids want to skip the regular spaghetti night and just have the casserole. We call it Spaghetti Casserole, imagine that. Bake at 350 for about 30 minutes or at 400 for 20 minutes. When it's done the cheese will be melted and bubbly around the edges.
