Cherry Salsa

Okay this is SO yummy!! I love fresh fruits and veggies in the summer. You just feel like something cool and fresh. And with cherries ripe right now, it is the time to make it. Seriously! Kris doesn't like fruit salsas, and even he LoVeD it. So do yourself a favor and whip up a batch, grab a bag of tostitos and you'll be on cloud nine! Enjoy.

Cherry Salsa
1t crushed red pepper
2T boiling water
2T lime juice
1T balsamic vinegar
1T sugar
1/2 t salt
1/2 t ground cinnamon
3 cups cherries, quartered
1/3 cup red pepper, chopped finely
1/3 cup purple onion, chopped finely
1T fresh cilantro, chopped

In a medium bowl, stir water and crushed red pepper together. Let sit while you prepare the other ingredients. Stir in the lime juice, balsamic vinegar, sugar, salt and cinnamon. Then add the cherries, red pepper, and onion. Let meld in the fridge for at least an hour (if you can last that long). Then top with cilantro just before serving. This makes about 4 cups. Ours was gone within an hour:) I think I'll double it next time for sure!
